Mr. De Baker is a native of Dykesville, Wisconsin (located on the Niagara Escarpment) and he and his wife Andrea are the owners of Trout Springs Winery and Branch River Trout Hatchery near Greenleaf, Wisconsin in southern Brown County. Operating on a 12-acre plot they purchased it in 1985, the couple are pursuing enterprises ranging from raising fish (thanks to their discovery of an artesian well) to growing grapes on the Niagara Cuesta, making wine, and pursuing innovative methods to capture more value from grapes since the plant produces flavonoids….all while working full-time off the farm as an electrician!

Steve was instrumental in seeking the national American Viticultural Area (AVA) designation for the “Wisconsin Ledge” and spent seven years convincing the federal agency that the 3,800 square mile area of the Niagara Cuesta was worthy of this special geographic wine producing designation. Winning numerous medals for their wines, Trout Springs Winery produced a port wine named Babordo Vino Vecchio that received a Best of Class at the 23rd annual Grand Harvest Awards in Piedmont, California…..the first Wisconsin Ledge AVA wine to receive such a medal!
